Peter McAuslan's Rye WhiskyFermented and distilled by Jean-François Theoret in Montreal in the heat of July 2016, Only two barrels of this whisky were produced, using 100 % Quebec grown raw rye grain. About 10% of the spirit was bottled and of sold in 2017 as Peter McAuslan’s Progression 1 rye spirit. (There may be a few bottles out there, somewhere…) The remaining whiskey was aged in the original first fill American White oak rye casks until winter of 2022 when the spirit was blended after a final tasting. The whisky was bottled at La Chaufferie Distillery in Granby in November 2022. Only 660 bottles are available for sale at the SAQ and at the Distillery store.
Tasting notes The whisky has a distinct tangerine hew, and sugar plum aromas waft from the whisky during the pour. The flavours are lively and spicy on the palate with an initial sweetness yielding to spice; dried fruit, touches of vanilla, and almond on the finish when a pleasing sweetness rounds out the flavours. This whisky is delicious straight, or with a little non chlorinated water. It can be consumed safely while the imbiber reads Peter McAuslan’s Brewing Better Beer in front of the fire or when safely tucked in bed. |
