Single Malt Whisky
Distilled from 100% malted barley, aged a minimum three years in first refill American oak bourbon casks. Peter McAuslan’s single malt whisky is malty with light peat character. A warming dram.
Friends of the distillery and competitors alike have expressed surprise and delight at the quality of this expression aged three years before being released in accordance with industry regulations. In fact, the spirit spent four years maturing, being sampled by Mr. McAuslan quarterly to assess its transformation from raw spirit to flavourful whisky. He deemed it ready for sale in May of this year.
As a Québécois with 25 years brewing experience, he wanted to make his own whisky in honour of his heritage. His Scottish roots are acknowledged by the placement of a Thistle, the flower of Scotland, on the label, represented by the proud Canada Thistle.
A meeting with distiller Jean-Francois Theoret in 2016 made this a project reality as the two men designed various recipes together. A decision was made early on to use high-quality peated British malt for the project a key to the surprising evolution of this whisky in barrel. "At the end of the day, a product will show its pedigree. This malt expresses the terroir from which it came, grown and malted by the Scottish border country. We were fortunate as well to secure fresh excellent quality bourbon casks in which the spirit could slumber and transform itself in four years."
